Overview

It is the liquid we get from the grated meat of a coconut. It is prepared by soaking the grated flesh of a coconut in hot water or scalded milk, then straining the blend. It can only be produced from a brown coconut. The color and rich taste of the milk can be attributed to the high oil content. The coconut cream rises to the top and can be skimmed off.

The remaining liquid is squeezed through a cheese cloth to extract a white liquid that is coconut milk. By repeating this process, the coconut milk becomes thinner. The thicker version is used for desserts and rich sauces. Thin coconut milk is used for cooking curries and soups.
